 Post subject: Conducting a potato experiment

We have been eating beans for a few days now.. so I decided to pick up some potatoes today while at the store. My experiment is this. I have 8 people in my family. I am cooking 10 lbs of potatoes right now- all but 6 potatoes were cut into wedges. the other 6 were put in to bake (I ran out of cookie sheets.). If all of these potatoes satisfy my large brood then I know what our main starch will be..
It is expensive to feed a large family. The kids love potato wedges- they would be happy to have them daily during the colder weather.
Will let you know if they are all full off of just potatoes...if not there is leftover chili in the fridge.

Success. Both trays of roasted potato wedges gone. Everyone full! 6 baked potatoes left will send to work with hubby tomorrow (not all of them of course!) So I just fed the whole family for $3, 8 people. We are all satisfied and it was good. very good. like comfort food.
So we will be loading up on potatoes next time I go shopping.

It's good that all your children like potatoes! I have a few who don't. I also have a few who don't like rice, one who doesn't like pasta, and a few who aren't big on corn. Makes it a little harder, it seems there's almost always someone who eats the minimum expected amount and won't eat more. Maybe they'll learn in time.

We have always eaten pretty simply. So my kids love beans, potatoes, pasta, and some even like plain rice :-) We are lucky I guess.
the way I did the potatoes were like french fries. most dipped them in ketchup.

Congratulations on the successful potato experiment!
We eat lots of potatoes too - they are so easy to make and filling. I don't know what I'd do without them. :-D

Tonight we're having a potato stew with other veggies in it. My family also loves the baked fries with katsup too - we have them for breakfast sometimes.

I'm having to buy the 5lb. bags now which are more expensive than the 10lb bags but I was getting too many green or mushy potatoes in the 10lb bags. I've been very happy with the switch - haven't come across one bad potato yet. :-D

for lunch I took the leftover baked potatoes- 4 of them. I cut into wedges and nuked. I rolled in chopped cilantro and seasonings- then popped under the broiler until crisp- they were very good and filling.

we've gone back and forth on the healthy eating, unfortunately. And in my pickiest ones, that has almost elevated junk food to a 'forbidden, therefore desired' level :?

I can't turn back time, but I'm trying to stick to my guns this time around.

I was inspired by you, Joyfulmama, we're having baked potato fries for dinner tonight.

potatoes are in now too. Potato soup is another good stretcher.

I use to like to season my wedges with Old Bay crab/seafood seasonings and dip in cocktail sauce. It helps in the summer when I start craving Maryland blue crabs.

Debra do you have a root cellar? It would be nice to stock up and store.

I don't have a root cellar just my pantry but I will be buying a bunch (like 100 lbs )this weekend. We don't have humidity here so I think they will fair well.
The night of the experiment we didn't have anything but the potatoes. We all get our greens in with our smoothies so I don't worry about it if they don't want any veggies at a meal time (snacks are also fruit, veggies, etc...) today for lunch they had chili and cucumber slices. I had leftover smoothies.
Tomorrow night will be potato wedges but with a side of grapes and cherry tomatoes as I have an abundance in the house.

I found some rice today at a wholesale club that was 35 pounds per bag. I want to get it. Any recommendations on storage?


I really like my rice and it seems to be the one starch I can get without spending too much, which I like.

Rice just put in a air tight bag, container,

I love my potatoes, just had some for a snack, I have been doing the vegan never lost a lot of weight, it went up and them down,

wonder if it is due to not have potatoes, I eat a lot of green fruit,

hardly any bread,

get it out of the bag. I have old jars, like giant pickle jars you see at country delis, that I use when I buy a big lot of a staple. I usually get 5 lb bags, and have this really cool plastic container that has a hole in it for pouring, and a measuring cup covering the hole. It may have been for cereal. It's great.

HealthyME,

Your rice should keep very well in any type container. I use tupperware, mainly because I used to sell it and have lots. Your only problem will be if it is stored at temperatures over 80 degrees. That seems to be the majic number for hatching little things in grains you don't really want to see or eat. :eek: Probably won't hurt you, it is just that crawling around thing I don't like. :D Always keep your grains in closed seperate containers so that if you do get a break out, they can't migrate to all the graines. And you can always sift them out and use the rice or whatever anyway.
