Seems like such a great idea - could use jackfruit it in a variety of ways besides this.
Yes, it's been quite a while, but I've tried green jackfruit. I made it with bbq sauce and served it on buns, like pulled pork. I mentioned the stuff in another thread recently. You can find it in Asian markets. If you don't have an Asian market, you can get it through Amazon and probably other online sources. Make sure you get the one packed in brine or water, not the ripe one packed in syrup. Husband would probably love them, but crab cakes sound icky to me. I don't do well with "fishy" stuff. I never ate crab cakes even when I ate meat, though I did eat salmon patties, which I suppose doesn't make any sense.
