Occasionally don't feel like porridge for breakfast - anyone got any ideas for what to put on toast for breakfast. Afraid I don't fancy the recipe with roast potatoes.

i love a light smear of fruit spread (simply fruit - nothing else!) on my ezekiel bread toast. generally that and a sliced orange is all that's needed to get a great start to the day!

One possibility, for some, is to eat no bread or other grain products for breakfast. For example, I eat no seeds of any kind: no grains, beans, peas, nuts or conventional seeds like sunflower.

My breakfast meal is interchangeable with lunch and dinner: starch (from tubers or gourds), vegs, and fruit. Here is a detailed list:

The point is that there are lots of possibilities once we set aside the conventional "breakfast foods."

That's true Burgess I remember being a bit startled then I went to Halland for the first time and had the option to have cheese ham and tomatoes for breakfast.

I guess I'm looking for something to replace the peanut butter I used to slather on toast. Sometimes I feel like something sweetish for breakfast and sometimes not.


Thanks eau too. I'd forgotton about a pure fruit spread. Ezekiel bread sounds interesting - what is it???

Hi Vic - Good idea - I could make some without garlic perhaps. Mind you it wouldn't be much lower in fat than peanut butter I suspect :nod:

Actually, Dr. Esselstyn's book has a number of recipes for fat free hummus. Basically, it is just cooked chickpeas, garlic, lemon and other spices ground up in the food processor. Even if you add tahini as the classical recipes do, it will still be lower in fat than peanut butter because it contains more chickpeas than tahini. The Esselsyns say it is also tasty if you spread it on bread with tomatoes and warm it up. I personally have not tried that yet, but I thought it sounded good.

One of my favorite things on toast is tomato paste; sometimes I add some herbs. I also like a nice crunchy mustard, or a light smear of miso.

Well, you can still have the hash browns. Just cook them without oil.

add some cinnamon or pumpkin pie spice to the mashed banana. Maybe mashed sweet potato?

Cook slices of red and green capsicum and halved tomatoes on griddle plate - sprinkle with a little Tamari or soy while cooking. Add a small mound of steamed spinach. Delicious with wholewheat toast.
Credit to the lovely chef at Koro Sun Resort in Fiji who 'invented' this for me.

Capsicum = (sweet) peppers
It's one of the confusing differences in food names Aust vs USA.
And, of course I meant "sprinkle with ... soy SAUCE"!
