Recipe: Deep Bayou Chowder

Deep Bayou Chowder (adapted from Favorite Brand Name Vegetarian cookbook)

1 1/2 cups chopped,onions
1 large green pepper, chopped
1 large carrot, chopped
8 ounces red potatoes, diced, unpeeled
1 cup corn
1 cup water
1/2 teaspoons dried thyme
2 cups soy milk
1 Tablespoon dried parsley
1 1/2 teaspoons seafood seasoning (I use Old Bay)
3/4 teaspoon salt, or to taste

Cook the onions, green pepper, carrot, potatoes, corn, and thyme in water until the potatoes are tender.

Stir in the milk, parsley, seasoning and salt. Heat gently until hot, but not boiling.

Thank you for this recipe. It's looks great AND I don't have to buy anything- I have all the ingredients already! I just didn't know I had chowder potential:).
