Sweet Potato Stew

Sweet Potato Stew

1 onion, chopped
4 cloves garlic, minced
2 bell peppers, any color, diced
1 to 2 cups water (start with 1 cup)
1 can (28 oz) diced tomatoes, with the juice
3 cups sweet potatoes, peeled and diced
2 cans black beans, drained and rinsed
1 can (7 oz) diced green chiles
1 cup tomato sauce
2 Tbs chili powder
2 tsp cumin

Put everything in a large pot and cook for 20 - 30 minutes until the sweet potatoes are tender but not mushy. Stir now and then and adjust the liquid if necessary.

Sounds great. The weather is cooling off this weekend and my lovely neighbor just gave me several containers of homemade stewed tomatoes for my freezer. Seems they would work great in this recipe.
