 Post subject: Blackbean Burgers

My Daughter gave me this recipe a year ago. After starting the SS Diet I finally tried it and it is realllllly good. They are also good with Mushroom gravy & mashed potatoes.
She pan fries them with spray oil but I found them to be a bit mushy so I like to bake them for a drier firmer texture.

1 can black beans drained and rinsed
1/2 finely copped onion
1/2-1 clove garlic minced
a handful of wholeweat dried bread crumbs
1 egg substitute (1 1/2 teasp. EnergG to 2 TBL. warm warter.
Sqish beans with fork a little
mix all but the egg sub together lightly then add egg sub and finish mixing (hands work great)
Form into patties (Makes 3 nice sized patties) and bake on pachment paper or lightly sprayed baking sheet for about 30 minuts at 350.
Top with all the usual (tomato, letice pickles ect.) and wholewheat bun.

LadyDi, I had similar issues when I started making veggie patties, the end product would come out too soft (soggy) to my liking. I picked up another recipe along the way and they recommended baking them. Since that time the burgers have come out great! A nice finished outside with a "meaty" middle. Nice simple recipe you have, will have to give it a try. Thanks!
