My favourite is Spicy Tomato Soup.
Quantities are approximate, as I never weigh the ingredients!

2 tins of chopped toms, add tomato purée also if desired.
A couple of carrots,
2 chopped onions,
Garlic,
About 6/7oz red lentils,
2 or 3 veg stock cubes,
2tsp cumin,
2tsp coriander ( cilantro?)
Chilli to taste!
Water, not sure of quantity, roughly about 4 pints.

I just chuck all into the pressure cooker, pressure for no more than 10 mins, then blend.
Delicious!

You can also make a very tasty soup using any (no-fat) refried beans (or mash your own beans!) diluted with either water, veggie broth, a can of diced tomatoes, or rice (or other veggie) milk--add whatever spices you like, and if you want, add a can of creamed corn (again, you could spin corn in a blender a bit, but I'm trying to make this easy!).

I like to make things in large quantities so I have something to eat all week long. I made Lentil Chili and Refried Beans over the weekend. I'll eat the refried beans with cilantro lime rice. I got the ideas from Lindsay Nixon's weekly plans.

I found a recipe for refried beans on the internet. http://simplefoodieliving.blogspot.com/ ... -free.html

For the chili, I used a whole bag of dried lentils and 2 cups of veggie stock and almost two cups of H2O (depending on how dry it becomes) chili powder, a 28oz can of whole tomatoes, chopped, garlic, onions, and chopped hot pepper. Whatever else you want to add. Cooks up in about 45 minutes.

Hi Chewy :)

Hope you are doing OK with the tooth.

Slow cooker: onion, carrot, parsnip, sweet pot ie root veg to your taste. When cooked to your preference, throw in a handful of greens, pour into blender or use a hand stick to a smooth consistency.

Take raw sprouted legumes, blend with fresh raw greens, serve.

Slow cooked split peas/onions - yellow are nice - with tomatoes blended in towards the end of cooking time. Fresh is best but canned is handy.

Lately I am adding a teasp. miso paste to my soups before blending, for a delicious fullsome savoury flavour. And sea vegetables to mineralise.
