 Post subject: What are u eating Monday: 6/11/12

Today is laundry and baking day which is good because yesterday it was up to 90 degrees here, but today it will only be in the 70's and so the house won't warm up all that much. :-D

B: Granola cereal with almond milk, 1 sl. GF toast, coffee substitute

S- Homemade GF egg-free, oil free cookies, hot tea

L- Leftover bean chili, tortilla chips, water

S- homemade GF egg-free, oil-free pizzille, hot tea

D- Rice, broccoli, fruit salad, water

Breakfast/lunch....rice with veggies

Dinner..steamed potatoes with kale

water to drink.

It has been so hot here(over 100 yesterday), even though I am inside (thank goodness for central AC)my eating has been sporadic.I just do not have an appetite in the hot weather :|

Gluten-Free, Egg-Free, Oil-Free Pizzelles

1/2 c. tapioca flour
1/2 c. garbanzo bean flour
1/2 c. potato starch
1 tsp non-alumiminum baking powder
1/2 tsp. salt
3 Tbs. commercial fat replacer or same am't of pureed prunes or applesauce
1/2- 3/4 c. non-dairy milk
1/2 tsp. vanilla
Sweeten to taste

Sift dry ingredients. Mix in wet ingredients using more or less "milk" until it's the consistancy of pancake batter. Heat non-stick pizzelle griddle. Drop batter by tablespoons onto griddle and cook about 1 minute. Let cool on rack. You can eat these as cookies with or without sugar free jam or sprinkle with apple pie spice or cinnamon. While warm you can also shape these into waffle cones or waffle bowls for non-dairy banana ice cream made in a blender or Yonanna maker.

If u don't have a non-stick griddle, you can use a small amount of PAM cooking spray if neccessary.

p.s.: If you omit the sugar and vanilla, this makes a good gluten-free pizza crust or crackers.

B: Oatmeal w/banana
Sn: Watermelon
L: veggie & bean burrito (vegan)
D: Stuffed bell pepper (brown rice, black beans, corn, salsa)

L 3 corn tortillas with 1/4 rice on each with salsa.
S fruit
D potatoes and veggies
S sf jello or sugar free butterscotch candy
water and tea all day long
