FOK Kale and potato stew

WOWSER! It is GOOD!

Made it last night and it was SO YUMMY! I had a huge bowl last night and 2 smaller bowls for breakfast! LOL!

Just wanted to add that this recipe took too long when I made it the first time, due to the potatoes, so I have now "Novicked" it. :unibrow:

Instead of chopped fresh onion, I tossed some dehydrated onion into a little water, then, when soft, added the tomatoes and beans. While I was doing that, I nuked the potatoes until ALMOST done. Chopped and added those, plus the spieces.

Cooked 7-8 min. Added the chopped kale and cooked another 5 min. Done in no time, and JUST AS GOOD!

Wait.....we are supposed to "stem" kale ?? so eat only the leafs ? Seriously I thought we ate it all...doesn't taste bad .... is that what they are meaning or am I not understanding ??

Because fresh kale stems are so tough, most people strip the leaves off the center stem and either toss them or use those stems in soups or stews. Anne Esselstyn says they can also be chopped up into small pieces and added to any kale dish.

You can eat the whole thing if you wish. Personally, I don't like kale very cooked--I like it still fresh and green. So I cook it only a very short time. That means that the stems would still be tough.

If you like the stems or you want to cook it longer, go ahead! :)

I made this, it was really tasty. i made mine a little on the spicy side. I used all of the kale but i cut it thin. I added brown rice to some and that was really good also.

I would think that a crock pot would be overkill on the kale. I guess you could make it in a crock pot and add the kale towards the end, though. :)

I was gonna ask the same thing. Since I prefer to cook in the morning or early afternoon when my house is empty..grin..I use my crock-pot a lot! In recipes where slowcooking might be overcooking, I prepare as directed and then put the whole thing into the crock-pot, turn the temp setting to warm until dinnertime. That's what I might do in this case, will let you all know how it goes. :)
